1. Orange Roughy with Mango Black Bean Salsa: The original recipe called for sea bass, but we substituted orange roughy (upon further research, I’m not thrilled with the sustainability of either–any recommendations for a sustainable substitute?). We also used 3/4 of a large jalapeno, and that was plenty of heat.
2. Sundried Tomato & Basil Couscous with Balsamic Vinegar: Nothing to add, just that it’s delicious.
